Wine Recipes

Wine Marinade

Pleasing red wine marinade for pork, chicken or vegetables


1/2 cup soy sauce

1/4 cup red wine  (your choice)

3 tablespoons white sugar

1 teaspoon minced garlic

1 teaspoon ground ginger

1 teaspoon molasses

Mix together all ingredients. Pour over meat or veggies and refrigerate for at least 1 hour.

Beer Recipes

These are a couple recipes I made for our grand Opening. They were a big hit.

Beer cheese in a Bread Bowl

1 round loaf (1 pound) Pumpernickel Bread

2 jars (5 oz. each) Sharp American Cheese Spread

1 package (8 oz.) Cream Cheese, softened

1/4 cup Beer ( I used our Brew House Light Canadian Lager)* use whatever beer you like  or have on hand.

1/2 cup Bacon Bits

Cut the top off loaf of bread; carefully hallow out to bottom, leaving a 1/2" shell. Cube the remaining bread and set aside. In microwave safe bowl, combine cheese spread and cream cheese. Microwave, uncovered on high for 2 minutes, stirring every 30 seconds. Stir in beer. Microwave uncovered another 20 seconds. Stir in bacon bits. Fill bread shell with dip. serve with the reserved bread cubes. Makes 2 1/2 cups.

Chocolate Guinness Cake


1 cup Guinness Beer ( I used our Brew House Red Ale) * use any dark beer you like or have on hand.

1/2 cup Butter, cubed

2 cups Sugar

3/4 cup Baking Cocoa

2 Eggs, beaten

2/3 cup Sour Cream

3 teaspoons Vanilla Extract

2 cups All Purpose Flour

1 1/2 teaspoon Baking Soda


1 package (8 oz.) Cream Cheese, softened

1 1/2 cups Powdered Sugar

1/2 cup Heavy Cream


Grease 9" sprig form pan and line bottom with parchment; set aside.

In small saucepan, heat beer and butter until butter is melted. Remove from heat, whisk in sugar and cocoa until blended. In separate bowl, combine eggs, sour cream and vanilla; mix well. Whisk into beer mixture. In mixing bowl, combine flour and baking soda; whisk into beer mixture until smooth. Pour batter in to pan and bake at 350 degrees for 40-45 minutes or until toothpick comes out clean. Cool completely in pan on wire rack. Remove from pan.


In large bowl, beat cream cheese until fluffy. Add powdered sugar and heavy cream; beat until smooth. Ice top of cake so it resembles a frothy pint of beer. Refrigerate leftovers. Yields 12 serving

* This is a heavy bodied and moist cake.  Very Good !

Beer Steak Marinade

4 (1/2 pound) rib eye steaks, or steal of choice

2 tablespoons Sea Salt

2 tablespoons Lemon Pepper

2 (12 oz.) can/bottles beer of choice

Place steaks in a large, shallow container with lid. Season each side of steaks with sea salt and lemon pepper. Place in pan. Gently pour beer over the steaks; making sure the seasoning does not wash off). Cover and refrigerate for 1 to 2 hours. Preheat grill on high. Lightly oil grill grates. Place steaks on grill, discard the marinade. Cook 5 minutes per side or to desired doneness.


Chocolate Acai Raspberry Martini

1 1/2 oz. Orchard Breezin Acai Raspberry Cabernet Sauvignon

1 1/2 oz. White Crème de Cacao

Shake wine and cream together and pour into martini glass, garnish with chocolate stick or fresh raspberries.

White Chocolate Spritzer

1 oz. Cru Select White Chocolate White Port

2 oz. Tonic Water

Serve over ice with a slice of lemon and enjoy

Orchard Breezin' Banana Pineapple Viognier

Fill blender 3/4 full with tropical fruit, ( pineapple, banana, mango and etc.), pour wine in until it nearly covers fruit. Blend until smooth, garnish with fruit pieces.

Home Made Wine Coolers

1 750 ml bottle of Wine

1 12oz. bottle Ginger Ale

Pour wine into ice cube tray and freeze. When cubes are frozen, plop 1 or 2 in a glass of ginger ale. Allow to set fords about 5 minutes, so the cubes start to melt a little. Stir and enjoy
